Spaghetti Squash is something I buy twice a year. The first time, I love it! But the second time, my brain and stomach want to know why I’m not eating real pasta.
How to Roast a Spaghetti Squash

- Preheat your oven to 400 Fahrenheit or 200 Celsius.
- Cut the spaghetti squash in half across its width and scoop out the seeds and the stringy bits. Place cut side down on a lined baking sheet and bake for 40 minutes or until easily pierced with a knife.
I remember when spaghetti squash first started getting really popular, and I will freely admit that I was truly and completely disgusted by the idea.
I mean, don’t get me wrong, I love squash, but why eat spaghetti squash when spaghetti already exists?
And then, after years of resistance, my dad tossed the seeds of one into the compost bin. And it grew, and I cooked one, because the rules of gardening dictated that I must.
And I loved it! But only once or twice a year.
