Grilled Cheese with Spinach and Bacon

Grilled Cheese sandwich with feta, sharp cheddar, spinach and bacon with a sweet and spicy strawberry relish

A grilled cheese with spinach, smoked bacon, extra sharp cheddar cheese. Also, spicy strawberry relish/ jam because why not?

Grilled Cheese With Spinach and Bacon

  • 2 slices of applewood smoked bacon or bacon of choice

  • 1 cup spinach, roughly chopped

  • 2 slices of your favorite bread

  • Sweet and spicy strawberry relish

  • 1/4 cup crumbled feta

  • Several slices of sharp white cheddar cheese

  • Unsalted butter


  • Place the bacon in a cold cast iron skillet and place over medium-low heat. Cook the bacon, flipping it occasionally, until it is cooked the way you like it. Remove the bacon from the pan and place on a paper towel lined plate.
  • Turn off the heat and immediately add the spinach to the pan with the bacon grease (*see note) using the residual heat to partially wilt the spinach, 30 to 60 seconds. Remove the spinach from the pan and set aside in a small bowl.
  • If the pan looks dry, add a little butter to it and swirl it around the pan until it has melted. Allow the pan to cool a little more, then add the two slices of bread. It should not sizzle. To one slice of bread, spread a little of the spicy strawberry relish, then top with the crumbled feta, cheddar cheese, bacon, and spinach in that order. Top with the second slice of bread and carefully position the sandwich in the middle of the pan.
  • Turn the heat to medium-low. Once you hear the bread begin to sizzle, cover the pan (this will help the cheese melt) and cook for 4 to 5 minutes or until golden brown. Uncover the pan and carefully flip the sandwich. Cook, uncovered, for 3 to 4 minutes or until golden brown. If you have a sandwich press or a smaller skillet, place it on top of the sandwich after you flip it the first time.
  • Carefully remove the sandwich from the pan and place on a cooling rack. Let cool for a minute or two, then cut in half and enjoy!


  • If you prefer to not cook your spinach or grilled cheese in bacon fat, feel free to clean out the pan and use butter or oil instead.
  • If you don’t feel like making strawberry relish, you can use strawberry jam instead. Just follow the recipe for the relish, but leave out the fresh strawberries and sugar and do not boil. Just heat gently for 5 to 10 minutes, then let cool. Or you could just use plain strawberry jam.
  • I am not picky about the bread used in a grilled cheese. Use whatever you like as long as it is sturdy enough to hold up to the sandwich fillings.

Ramblings: Free Sandwiches (Recipes) Galore! Coming Soon to a Blog Near You.

I realized recently that despite my deep and abiding love for sandwiches, there are no sandwiches. 

At least, there aren’t any on this part of the blog.

I did recently make burgers, but burgers don’t count. At least not to me, not as sandwiches.

There are some sandwiches on the cooking community side of the blog, but those don’t count either because the cooking community was and has been in beta for ages. 

And while it will be coming out of beta soon, it is subscription based. Which means the sandwiches aren’t free, and we need free sandwiches!!

So we start the free sandwich train with this grilled cheese with spinach and bacon!
