I woke up with the sniffles today which means it’s the perfect day for this simple vegetable soup! (Even though it’s super hot outside.)

Day 14: Simple Soup

Ingredients:

  • 5 swiss chard leaves, thinly sliced
  • 3 medium carrots, cut on a bias
  • 3 tbsp. lentils
  • 1 small yellow onion, thinly sliced
  • 1 whole peeled tomato from a can, crushed
  • 1 1/2 tsp. jerk seasoning
  • 1/4 cup canned coconut milk
  • Fine sea salt
  • Extra virgin olive oil

Directions:

  • Place the chard, carrots, lentils, onion, tomato, and jerk seasoning in a 1.5 quart dutch oven with 3 cups of water, a big pinch of salt, and a drizzle of olive oil. Place over medium heat and bring to a boil. Reduce the heat and simmer for 25 to 30 minutes.
  • Taste and add more salt if needed, then pour in the coconut milk, stir, and simmer for 15 minutes.
  • Remove from the heat, let cool for a few minutes and enjoy with some type of bread.

Notes:

  • You can buy jerk seasoning from any grocery store, it should be in the spice aisle or the international aisle. You could also make your own. You could try the one I made for these jerk chicken wings with charred cabbage, or you could find a different recipe online.
  • Make sure you use canned coconut milk and not the coconut milk from a carton.
