A Very Simple, Chunky, Tomato Salsa

Like all of my other prep recipes, this very simple, chunky, tomato, salsa can be paired with just about anything. 

A Very Simple, Chunky, Tomato Salsa

  • 1 1/2 lbs. halved cherry tomatoes in a variety of colors

  • 1 large sweet onion diced

  • 3 garlic cloves, thinly sliced

  • 1-2 tbsp. whole grain mustard (optional)

  • 2-3 tsp. fine sea salt


  • Combine all of the ingredients in a large bowl and stir. Transfer to an airtight container and store in the fridge for 3-5 days.


  •  This salsa is very basic which means you can add anything to it. Smoked paprika and rosemary are especially good cooked with this. 
  • You can add this as is to a recipe, or blitz it in a blender or food processor to a finer consistency.
  • If you don’t have cherry tomatoes, you can dice a larger tomato instead.


My garden is producing a lot of cherry tomatoes right now. 

To the point where I wonder why I planted them.

And then I make a fancy sandwich with this salsa or put it on rice or chips or whatever and I remember “Oh right, this is why I planted these things.”

I’m still not planting tomatoes again next year.

Maybe one tomato. 

Or two.
